Homemade Banana Bread

Banana bread is a very versatile kind of bread, as you can make different variations out of it. It’s a good way to add in the fruit, if you don’t feel like eating it on its own.

As you age, you don’t always feel like having the iced or frosted cakes or desserts. That’s when the fruity desserts and breads come into play. Though, I don’t firmly believe that it has anything to do with age but that’s what happened with me. But, this banana bread is a hit with both kids and adults. It’s also an easy and healthy snack for kids’ lunch boxes.

I got this recipe from a friend many years ago, and I have been using it for a long time, it’s a fool proof recipe and can be put together in no time. If you have those ripe bananas lying in your fruit basket, it’s time to make this.

Recipe for Banana Bread:

Preparation time: 15 minutes

Cooking time: approx. 1 hour

Things you need:

  • 1 3/4 cups all-purpose flour
  • 3/4 cup sugar (I used half white and half brown sugar, you could all white or all brown)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup vegetable oil or 1/2 cup butter
  • 1/2 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas
  • 3/4 cups chocolate chips

What to Do:

In a large bowl, combine the flour, both sugars, baking powder, baking soda and salt.

In another bowl, combine the egg, oil, yogurt and vanilla. Mix well.

Stir into dry ingredients just until moistened.

Fold in bananas and chocolate chips.

Fill greased or paper-lined loaf pan or muffin cups two-thirds full.

Bake at 350 degrees F for 50 minutes to 1 hour for loaf tin or 25-30 minutes for muffins or until a toothpick comes out clean.

Cool for 5 minutes before removing from pans.

Variations:

  • Chocolate chips can be substituted with walnuts or raisins.
