Grilled Fish with Veggies

Eating healthy is not a matter of one day or meal, it’s a struggle which you have to do constantly with all the meals all along your journey of healthy eating and lifestyle.

Eating healthy is often synonymously used with the idea of weight loss, which of course has its impact on it, but it should not be the sole purpose. We have to realize the importance of what being overweight results in. It directly impacts your health and heart.

Well, you must have heard the phrase, easier said than done. Sigh, it’s definitely not the easiest thing in the world, in fact it’s exactly the opposite of what the word easy means.

For me, I have been a kind of person, who used to be so fond of the sweets and desserts, that none of my meals were completed without ending them with sugar loaded stuff. But I did realize with time that in order to shed a few kilos, I need to omit these few things from my diet- sugar, white flour, white rice, butter and more of this crap. Of course, that’s not possible to completely omit but one can definitely make an effort to reduce the intake of these. I am not at all a very health conscious person, but I am trying to be on the bandwagon, and no I haven’t reached there yet, but I am trying, little goes a long way.

Keeping your self motivated and consistent is the key. I like to keep myself motivated by looking at the journey of others, it really does work. You need to bring the feel that you can do it too. YES, you can!

Uh-oh wasn’t I here, to write the recipe for the grilled fish and veggies, which I cooked last night?

Let’s get cooking then, shall we? This is the easiest and one of my favorite meals to have, grilled anything with mixed veggies.

I won’t call it a recipe but I use this spice mix for many things, be it poultry, fish, beef patties. You just have to throw in everything and you have your dinner ready.

For the fish, you need:

  • Fish- Carp (Ikan Gurame) I used Carp because that’s what is commonly available in Indonesia, it’s a fresh water fish- 1 kg
  • Spice mix- 1-2 tablespoons (I use my homemade version of you could say Taco seasoning. I don’t really measure stuff, just mix 1/4 teaspoon each of all of these), usually what I have on hand 😉
    • oregano
    • paprika powder
    • cumin powder
    • black pepper powder
    • onion powder
    • garlic powder
    • chili flakes
    • salt- to taste
  • Ginger and garlic paste- 1 tablespoon
  • Lemon juice- juice of half to 1 lemon depending on the size
  • olive oil- 1tablespoon

Marinate the fish with the marinade of 1-2 tablespoon of the seasoning mixed with ginger and garlic paste, lemon juice and olive oil. Grill in the grill pan or any non-stick pan with little or no olive oil.

For the veggies

You can use any veggies, you have on hand, I used

Zucchini- 1

Carrots- 2

Portobello or button Mushrooms- 5-6

salt- to taste

Red chili powder- pinch or 2

Take a grill pan, and throw in your veggies with little oil, add the spices. Cook on medium to high heat.

Serve hot.
