Jalebi (fried pretzel like sweet, soaked in sugar syrup) is one of the common street foods of Pakistan and South Asia. During the rainy season, people love to eat jalebi, along with samosas. Jalebi has a particular circular pretzel like shape, which is achieved by putting the batter in a nozzle shaped bottle or often a cloth used by the sweet vendors, and you start going in circular motion in the hot oil. After that, just soak in the prepared sugar syrup.

It is very easy to get jalebi back home, but when you are away from home, these little things make you crave for them like anything. Whenever I have craving for jalebis, I use this amazing recipe, which I derived from an amazing Youtube channel called Food Fusion, with little changes here and there, I can make them easily at home, whenever I want.

Recipe for JALEBI
Things you will need:
For Sugar syrup

-Water 1 cup
-Sugar 2 cup
-Green cardamom 2-3
-Lemon juice 2 tsp
For Jalebi:

-Lukewarm water 2-3 tbs
-Sugar 1 tsp
-Instant yeast ½ tsp
-Flour 1 cup
-Orange Food color 1/4 tsp
-Ghee melted 1 tbs
-Gram flour 1 tbs
-Water required to make batter
-Oil for frying
Directions:
For Sugar syrup:
-In a wide pot, add water, sugar and green cardamom, mix it and cook until syrup thickens, you need consistency of one thread.
-In the end, add lemon juice, stir well and set aside.

For Jalebi:

-In lukewarm water, add sugar and instant yeast, mix & let it sit for 15 minutes.
-In bowl add flour, food color, ghee, gram flour, yeast mixture, water and make a batter of desired consistency. Let it rest for 10 minutes and consume immediately (within 10-15 minutes).
-Now pour this batter in the sneezing bottle.

-In frying pan, heat oil and squeeze the bottle and make centric rings with the batter.
-When one side is cooked, turn over and fry the other side.-After frying, immediately put the fried jalebis in the sugar syrup. The sugar syrup should be slightly warm when you add jalebis in it.
-Turn over after a minute so that both sides are coated with the syrup.-Keep them in the sugar syrup for about 2-3 minutes.
-Remove jablebis with the help of tong and shake lightly so that excess sugar syrup.
-Jalebi is ready to serve.
