There are many varieties of Chinese noodles. I am most fascinated with this variety called the La Mian noodles, mainly because it’s a treat to watch how they are made.

La Mian are basically Chinese hand pulled noodles, where the La means to pull and Mian implies noodles. They are made by twisting, stretching and folding the dough into strands, using the weight of the dough. This process is repeated multiple times, in order to get thin strands of noodles.

La Mian are usually served in beef or mutton broth, along with different sauces, meat and vegetables to make different varieties. They can also be stir fried with adding sauces, meat and vegetables and hence called Chowmian.
